This coffee is produced by 45 members of the Ascarive group. The altitudes are varied and sloping, making mechanisation impossible here. Unlike the stereotype of coffee farming in Brazil, this region is populated by smallholdings and hand-harvesting is common, if not essential.
This lot is processed using the traditional natural method. Coffee cherries are picked, sorted and dried on patios with regular raking and turning. Unlike ‘naturals’ from other producing countries, these are rich, smooth and chocolatey - and well suited to a variety of brew styles and roast levels.
